Description
A versatile mix masala blend for preparing rich and flavourful curries.
Ingredients
Red chilli, coriander, Turmeric, cumin, cassia, clove, pepper, Balck cardamom, mace, Green cardamom, Nutmeg, Bay leaves and salt
How to Use
Step 1: Heat oil in a pan. Step 2: Add 2 to 3 finely chopped onions and fry until golden brown. Step 3: Add ginger paste and garlic paste, then sauté well until the mixture becomes aromatic. Step 4: Add Master Special Mix Masala and cook on low heat until the masala is well roasted and starts releasing oil. Step 5: Add boiled meat and sauté for a few more minutes so the masala coats it evenly. Step 6: Add water as required and let the curry cook until it reaches your desired consistency. Step 7: Once it comes to a gentle boil, garnish with fresh coriander and serve hot.
Master Tips
For richer flavour, fry the onions patiently until they turn properly golden brown before adding the pastes. Cook the masala on low heat after adding Master Special Mix Masala so the spices roast well and release their full aroma. Use boiled meat for faster cooking and better absorption of the masala into the curry. Add hot water gradually to control the gravy thickness as per your preference. Finish with fresh coriander leaves before serving for a fresher aroma and classic curry-style presentation. Store the opened pack in a cool, dry place and keep it tightly sealed to maintain freshness and flavour.

Good everyday mix, though I use a light hand with it. The aroma becomes much nicer after cooking it into the gravy.

Used this in a mixed vegetable curry and enjoyed it. Handy when I do not want to measure several spice powders.

GOOD TO KNOW

FREQUENTLY ASKED QUESTIONS

How do I use Special Mix Masala?
Heat oil in a pan, fry chopped onions until golden, then add ginger and garlic paste. Add Master Special Mix Masala and cook on low heat until aromatic. Add boiled meat, sauté well, then add water as needed and cook until the curry is ready. Garnish with fresh coriander and serve hot.
Can I adjust the gravy consistency?
Yes. You can add water gradually depending on how thick or thin you want the curry. For a richer gravy, use less water and simmer longer. For a lighter curry, add a little more hot water while cooking.
Can I use Special Mix Masala with different meats?
Yes. Special Mix Masala can be used with mutton, chicken or other curry-style meat preparations. It works best in dishes where the masala is cooked well with onion, ginger-garlic paste and gravy.
When should I add the masala while cooking?
Add Master Special Mix Masala after the onions, ginger paste and garlic paste have been sautéed. Cook the masala on low heat so it roasts properly and develops a deeper flavour before adding the meat and water.
